What is Alkalized Cocoa Powder?


Alkalized cocoa powder, also commonly known as Dutched cocoa or Dutch-process cocoa, is natural cocoa powder that has been treated with an alkaline solution (usually potassium carbonate) to neutralize its natural acidity.


This process was invented in the early 19th century by a Dutchman named Coenraad van Houten, which is where the name "Dutched" comes from.


The Effects of Alkalization:
1. Flavor: The most significant change. The process tames the bitterness and sharpness of natural cocoa, resulting in a mellower, richer, and more chocolatey flavor. It often develops subtle malty or earthy notes.

2. Color: The chemical reaction darkens the powder. This is why "black cocoa powder" (heavily Dutched) is used for Oreo cookies and devil's food cake to achieve that intense dark color.

3. Solubility: It dissolves much more easily in water and other liquids, making it the preferred choice for hot chocolate, chocolate drinks, and sauces.
